I have been away from my store for quite some time. Some of my products have ... "Sorry, this product is completely sold out. Notify me when it's back in stock." Does this mean they are discontinued?

It's not discontinued. Zazzle just doesn't know exactly when it will be available again. Sometimes they are between makers and it will come back when they find a new maker. If they don't, it will switch to saying "this product is discontinued".

You can do a sort to see what got actually discontinued by changing the Product Visibility in your store back end from All ( or whatever you have it set to) to Discontinued. In some cases the product is just gone forever but in other cases it is simply discontinued in specific sizes or color options and you can edit the product to a new option. Same for "out of stock". It's worth seeing if it's simply the color or size you initially chose that is out of stock and then you can edit to a new one.
