Why can't we choose the individual items shown in our little revolving merch booth thingies? Or can we and I just haven't figured it out?

Are you talking about the merch booth or the flash panel?
If you mean the flash panel, you could add a specific keyword to the items you want to feature and enter that in the keywords field when setting up the flash panel. (For example, the one on my store is set to show my inspirational products.)
If you do mean the merch booth, that I'm not sure of. I haven't used it anywhere except Facebook, and I wondered myself how it chose the items it displays. (It doesn't revolve there, though, which is why I'm wondering if you mean the flash panel.)
